If there's anything I like more than the satisfaction of baking - it's baking made easy. Also healthy baking - but mostly I take the stance of the easier the baking, the better and so when Sweetpea Pantry offered to send me a Chocolate Giggles Biscuit Mix, a healthyish chocolate biscuit that couldn't be easier to mix, I jumped at the chance and dragged Katy into helping me bake them on a boring weekday.
These couldn't be more easy to make, to be honest, you need the box, 125g of butter, 4 tablespoons of honey and an egg white. Melt the butter and honey together and whip up the egg whites until they're frothy, then mix them in together and add the bag of goodness that's inside the packet and form a dough - wrap it in clingfilm, stick it in the fridge for about half an hour to cool and then roll it out, cut the biscuits and chuck them on a baking tray. Put them in the oven at 180 degrees for 8-10 minutes, whip them out when they're ready, leave them to cool and then enjoy. Voilè.
So would I recommend them? Yes. At £4.99, this seems steep for a packet mix, but when you take into account that this is packed full of rye flour, barley flour, wholemeal flour, raw cacao and flaxseeds then this works out considerably cheaper than getting al of the ingredients to make it yourself. These are crumbly and soft, and they really are sweet enough to take the edge of off a craving without making you feel cheated. My brother, who's paleo, didn't actually get any sort of look in when it came to these - his girlfriend and I devoured pretty much the lot.
